Over the past few years Skill Exchange has had the pleasure to work with many inspiring and passionate makers from all different backgrounds and fields of study. Chef Travis McConnell (of Boccalone and Rival Bar + Kitchen fame) taught a handful of workshops with us on topics ranging from bacon making, charcuterie, and sausage making. It was bittersweet for us here at Skill Exchange when Travis and family relocated to Arkansas to begin work on his own butcher shop.
Travis has recently launched a new kickstarter to help make his sausage, bacon and whole animal butchery dreams come true. Travis has developed Butcher & Public, Little Rock’s first sustainable, whole animal butcher shop and restaurant. Butcher & Public will also be offering butchery workshops!
Butcher & Public will also be offering butchery workshops! Travis moved to San Francisco to hone his craft, so that he could take the skills he learned, and share them in his home state. While we were sad to lose his skills here in the Bay Area, we're so proud and excited to see Travis continue to pursue and share his craft in other communities.
